Recipe: Leek Bread Pudding (adapted from an adaptation of a Thomas Keller recipe)
my notes:
use half the butter, and maybe more leeks
add in small cubes of butternut squash or roasted tomatoes
no need to take off the bread crusts, and use a firm loaf to make cutting easier
double the milk and omit the cream (it was too rich for my taste)
it’s fine to substitute cheese
we made it without the chives and it turned out just fine
make sure you have someone around to keep you company and/or a good bottle of wine. it’s a leisurely recipe but worth it!
would be great instead of stuffing at Thanksgiving
